Requisitos:
Bachelor Degree in Culinary Career
+3 years of experience as Head Chef, Cook or Executive Chef
Advanced English
- Able to work at a rapid pace while maintaining attention to detail; ability to multitask
- Must have good supervisory skills.
- Must have good communication and ability to promote sales.
- Must be skilled in time management.
- Must have teaching and motivational skills.
Actividades a realizar:
Key Responsibilities and Essential functions
Administration
Propose, update and improve the processes of production, handling, cleaning and service both on board and in the central kitchen.
Prepare reports on the performance of personnel on board. Create features
Control daily orders and shipments through the Master List. Updating the Master List
Breakage control
Supervise the quality of products received, and entry into warehouses on board and in central kitchen.
Supervise the fulfillment of the masterbooks on board and in central kitchen: Master Book of Production - Master Book of Kitchen - Master Book of Pastry and Bakery - Master Book of the Bar
In charge of updating any changes made by Chef Asesor in the F&B Master Books.
In charge of keeping the health cards of all F&B staff updated.
Weekly meetings with the F&B Manager and Deparment
According to F&B Management, willing to be on board always, either 14/7 or as scheduled by Human Resources department
Prepare reports according to the visits to the vessels
Monthly review prices according to seasonal and non- Seasonal products.
Prep Kitchen and on Board
Verify that the supply process is correctly completed from beginning to end, both in the central kitchen and on board.
Responsible of all food and beverage operations during the service in kitchen, restaurants and bars
Control the health and safety of the Food and Beverage area and the responsible all staff
Supervise the preparation and / or pre- Production of food in general according to the Master Book
Wastage control
Breakage control
Manage FIFO system and labeling of all products
 Responsible for attending our guests in the dining room in any meal period in order to give more accurate explanations of the preparation, as well as assist passengers and suggest combinations between the dishes presented
Responsible for giving immediate solution to extra requests from passengers in case they do not want any of the food presented and providing options.
In charge of the organization of the welcome lunch for our passengers in the place assigned
Control the production of central kitchen.
Cook
Se le puede requerir en cualquier otra área para realizar una función distinta a su cargo cuando se le requiera según Dirección del departamento. Estas funciones van de acuerdo a lo requerido ya sea en oficinas/planta o el mismo barco
